This is wonderful oil, with excellent provenance and a lovely back story in which an unlikely meeting between two friends, one Greek, one Welsh, led to a shared mission: the creation of the most sustainable olive oil ever grown.

Have they succeeded? Well, it is very sustainable, and it is truly excellent.

Ilias and Williams’ grove in southern Greece is Europe’s first certified regenerative olive grove, where the focus is on healthy soil, a thriving ecosystem and working with, never against, nature. No chemicals. Every olive is hand-harvested. The result is an oil naturally high in polyphenols (more GOOD), with the character and freshness you’d expect from fruit grown in lockstep with its environment.
